Quick and Easy Peach Cobbler

Preheat oven to 350F

INGREDIENTS:
1 large can of peaches with juice (or 6-8 fresh peaches peeled and sliced)
1 1/2 c. sugar
1 c. oat flour (if you don't eat gluten free, you may just use regular!)
1 tsp. baking powder
1 egg
1 stick of butter
Cinnamon


INSTRUCTIONS:
Pour peaches into a large Pyrex dish. Sprinkle 1/2 cup of sugar over the top. Mix together dry ingredients. Add egg and mix until crumbly. Sprinkle the mixture over peaches. Drizzle butter over the top and sprinkle with cinnamon. Bake for 30 minutes in preheated oven.

Delicious G-free Zucchini Bread! {adapted from Gluten Free Goddess}

Prep Time         Bake Time
------------         ------------
20 Minutes         Approx. 60 minutes



Preheat your oven to 350 F. Line a 9 inch loaf pan with parchment paper, and lightly oil it.

INGREDIENTS:
1 rounded cup of grated zucchini
1 cup sorghum flour
1/2 cup tapioca starch {or tapioca flour}
2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. xantham gum
1/2 tsp. fine sea salt
2 tsp. cinnamon
1 cup brown sugar
1/3 cup light olive oil or melted coconut oil {I prefer coconut oil}
2 eggs {egg replacer=1/4 cup of liquid}
1/4 cup almond or coconut milk
1 Tbs. vanilla extract

OPTIONAL:
1/3 cup chopped walnuts or pecans
1/3 cup of chocolate chips

INSTRUCTIONS:
1.Press out as much moisture as possible from the grated zucchini.
2.In a large mixing bowl, sift or whisk together sorghum flour, tapioca starch, baking powder, baking    
soda, xantham gum, sea salt, and cinnamon. Add in the brown sugar.
3.Put the oil, eggs {or egg replacer}, and milk into the dry ingredients and mix until batter is smooth.
4.Add all but a few strands of zucchini into the batter and mix. If you are adding optional nuts or chips 
    mix those in as well.
5.Scoop batter into prepared loaf pan. Using a silicone spatula, even out the top. Add your few 
strand of zucchini to the top as a garnish.

Bake in the center of a preheated oven until the top is golden and firm but gives a little when lightly 
touched. The bake time should be between 50-60 minutes. Test consistensy by sticking a thin knife 
or toothpick into the center. It should come out with no crumbs or batter.

The Many uses of Coconut Oil <3

Coconut oil is AWESOME!  It's crazy all the hundreds of different ways you can use this oil!!
I use my coconut oil in my everyday routine so many times! I personally use my oil for getting rid of the frizziness in my hair, a replacer for conditioner, my face wash, my shaving cream, and occasionally my toothpaste. Did you know that if you rub a very, very small amount of oil evenly through your hair everyday you can prevent    
                                            -Frizziness
                                            -Split ends
                                            -Dull hair
                                            -Dandruff
                                            -Hair loss
                  And can promote
                                            -Hair growth
                                            -Gorgeous hair!!
     
      Enough about hair! Other coconut oil uses:
                                             ~Longer eyelashes {just rub around eyes}
                                             ~Conditioner for dry, cracked wood {or wooden kitchen utensils}
                                             ~Add to your tea or coffee {lips will soften and eventually you will notice 
                                               your skin isn't very dry}
                                             ~Replaces fatty cooking oils
                                             ~Shave with coconut oil, and you're guaranteed to have hydrated legs!
                                             ~Mix with equal parts sugar and make an exfoliating sugar scrub
                                             ~Rub oil on dogs fur and cover with a sweater...it will kill fleas!
                                             ~Boosts metabolism! Just by ingesting coconut oil, your metabolism 
                                               rate will speed up!! Here is a chart to check and see have many Tbs.

Gluten Free Oat Flour Brownies

Prep time               Bake Time

15 Minutes             30 minutes




INGREDIENTS
1 1/2 cups of oat flour
3/4 tsp. of baking soda
1/2 - 1 tsp. of expresso powder {depending on how strong you like it}
3/4 cup of unsalted butter
1 1/2 cups of sugar
1 cup cocoa powder
1 tsp. salt
1 tbs. vanilla extract
3 eggs
1 1/4 cup of chocolate chips {optional}


INSTRUCTIONS
1.  Preheat oven to 350 F. and grease an 8x8 inch pan
2.  Comine oat flour, baking soda, and expresso powder...set aside.
3.  In a sauspan, melt butter. Once melted add in sugar, cook for 1 minute.
4.  Remove from heat and add in the cocoa and salt. Stir to combine.
5.  Add in the vanilla, then the eggs one at a time and whisk together fully.
6.  Now, add dry ingredients to the wet.
7.  Stir in optional chocolate chips. {If you want them fully intact wait 10 minutes to do this}
8.  Spread mixture into prepared baking pan.
9.  Cook for 30-35 minutes or until the top is firm, and the middle is just moist.

My New Blog!

    Hey everyone, I'm Rachel! I have started this blog for gluten free baking especially, but I may add in the occasional healthy eating and healthy living tips. :) My blog name is because my mom and I have shared many laughs in the kitchen over what a disasterous mess I've made, although I may add in that most have come out of the oven quite beautiful...in taste and in looks!
