ᎾᎪᎢ FᏞᎪKᎬ ᏟᎾᎾKᏆᎬᏚ {ᎪᏌᏃᏌ ᏢāᎡᏚᏞᏌ ᏟᎬᏢᏌᎷᏆ}

These delicious oat flake cookies are a Latvian treat! Latvia is where my sister was adopted from 4 years ago. When we went to pick her up we purchased a Latvian cookbook so we could make her yummy foreign food!     

Today I came across this recipe, and thought it'd be great to make for her and blog about!


Here's how to make these simple, low sugar cookies:


Preheat oven to 400 degrees Fahrenheit

15 minutes      15 minutes
 

INGREDIENTS:
1 cup whole oats
1/2 cup rice flour
3 Tbs. potato starch {or sorghum}
1 Tbs. tapioca starch
1/2 tsp. xanthan gum
1 tsp. baking powder
3 Tbs. brown sugar
1/2 cup dried fruit of choice
2/3 cup melted butter
1 lightly beaten egg

INSTRUCTIONS:
1. Dump the oat flakes into a mixing bowl. Sift in the flours and baking powder.
2. Combine all ingredients. Mix together on medium speed until smooth.
3. Use a spoon to put dough balls on the baking sheet.
4. Put cookies in preheated oven and bake for 15 minutes
5. Cool the cookies then remove from baking sheet. Use a flavor of jam that will taste good with your cookies as a garnish.
